We here in the Body and Belly household love our Mexican food. But we didn't love the ingredients found at that fast-food place (you know the one) or even in the ethnic-food aisle at the grocery store. We don't speak Spanish, but we still couldn't pronounce most of the ingredient lists. Not cool.
Enter our Taco Seasoning. With a new concoction in hand, we set out to create a much healthier version of one of our favorite weeknight meals. Taco Tuesday anyone?
For the meat mixture, brown 1 pound of organic ground beef (or turkey if you prefer) in a large skillet with 2 T. of our Taco Seasoning.
While the beef is cooking, arrange your salad fixings on your plates. We used shredded iceberg lettuce, organic tomatoes, organic Tostitos "Scoops" tortilla chips, Horizon organic shredded cheese (Mexican blend), Daisy squeezable sour cream and our Body and Belly Mild Salsa.
Drain the beef after cooking, and place over your salad fixings. YUM!
